Nadia Jaftha has collaborated with iconic South African pasta brand, Fatti’s & Moni’s, to make a restaurant-style pasta dish using the Recco pasta recipe and Bellissimo range.
Nadia Jaftha has collaborated with Fatti’s & Moni’s as the lockdown regulations are gradually relaxed, however, with many South Africans still uneasy about visiting restaurants for sit-down meals. Although delivery services are available, it is often more fun to create restaurant-style food from the comfort of your own home. Nadia Jaftha partnered with Fatti’s & Moni’s in promotion of the iconic brand’s latest Bellissimo range, which includes tagliatelle ribbons made from 100 percent durum wheat.
Nadia chose to replicate the Recco pasta, made with a spicy tomato-based sauce which originated at the restaurant franchise, Primi Piatti. She mixed a range of spices together to make a premade pasta sauce, and then thickened the mixture with fresh cream. Thereafter, she added it to the tagliatelle ribbons and garnished the dish with coriander.
